Halte is a sophisticated, low-ABV Saison that balances the refreshing qualities of a Grisette with the depth of a barrel-aged wild ale. The aroma is led by the herbal and spicy character of noble hops, mingling with lemon zest and a rustic, peppery yeast profile. On the palate, a soft, grainy malt base of wheat and pale cereal is elevated by a gentle, oak-derived structure and a hint of farmhouse funk from the foeder-aged components. Exceptionally dry and highly carbonated, it finishes with a clean, lingering floral bitterness that emphasizes its artisanal, table-beer roots and refreshing, sessionable character.
Appearance. Pours a pale straw to light gold (3 SRM) with a dense, rocky white head that shows excellent retention and leaves intricate Belgian lace. The beer is unfiltered, displaying a persistent, slight haze from the wheat and wild ale components.
Aroma. Moderate to high intensity with a complex blend of cracked black pepper and citrusy esters, specifically lemon and pear. The hop character is prominently noble, offering spicy, herbal, and floral notes. A light, rustic graininess is present, alongside a subtle earthy funk and a hint of oak from the foeder aging.
Taste. Initial impression is very dry and refreshing. A soft, grainy malt flavor reminiscent of fresh crackers and wheat is immediately joined by peppery yeast phenols and a tart lemon-like acidity. The noble hop flavor is moderate, providing an herbal and floral depth that complements a moderate bitterness. The finish is bone-dry and clean, with a lingering spicy and floral aftertaste.
Mouthfeel. Medium-light body with very high, effervescent carbonation that creates a prickly, refreshing sensation. There is no alcohol warmth. A slight creaminess from the wheat and foeder aging is present, but the overall feel is crisp and highly attenuated.
