Sacrilège Grenache is an elegant Grape Ale that captures the essence of the Pic Saint Loup terroir. By fermenting a barrel-aged blend on Grenache and Cinsault grape pomace, the beer achieves a sophisticated profile of red summer berries and soft floral notes. The spontaneous fermentation, powered by indigenous yeast from the grape skins, introduces a rustic complexity that complements the carbonic maceration character. Delicate spice and earthy tobacco nuances meld with a restrained malt backbone. It drinks with the effervescence of a sparkling wine, offering a vibrant, fruit-forward experience that concludes with a refined, bone-dry finish.

Appearance. Rich ruby to burgundy in color; light pinkish-white head with medium-low retention and fine lacing; generally clear, showing brilliance despite the pomace contact.

Aroma. Moderate-high intensity featuring prominent red fruit varietals; notes of wild strawberry and raspberry from Cinsault blend with the peppery spice of Grenache. Low crackery malt; subtle toasted oak and a faint, rustic earthy funk from spontaneous fermentation; no hop aroma.

Taste. Initial impression is vibrant and vinous. Flavors of red cherry, pomegranate, and berry skins dominate, supported by a very low, neutral pale malt character. Hop bitterness is low, allowing a mild, refreshing tartness to provide balance. Nuances of tobacco and leather emerge in the mid-palate from the red grape skins. The finish is exceedingly dry, crisp, and clean with a lingering fruity ester.
