This Norwegian Julebokk-style Doppelbock captures the depth of the Polar Night with its Mørketid character. Brewed with a custom-roasted barley malt, it presents a complex landscape of Maillard richness, toasted bread crust, and a hint of dark chocolate. The three-month barrel aging of a portion of the batch integrates a subtle woody roundness into the powerful 9.5% ABV frame. Expect a luscious, dark fruit profile reminiscent of plums and raisins, balanced by a clean lager fermentation. This is a formidable, warming lager that emphasizes malt luxury and a velvet-smooth finish perfectly suited for slow winter sipping.
Appearance. Deep mahogany to dark brown with brilliant ruby highlights. Topped by a large, creamy, tan head with excellent persistence and fine lacing.
Aroma. High intensity of rich, toasted malt and dark bread. Significant Maillard-driven sweetness featuring notes of fruit leather, plums, and a faint hint of cocoa. A clean fermentation profile is accompanied by a moderate, well-integrated alcohol presence and a whisper of oaky vanilla from the barrel-aged component.
Taste. Dominant malt-forward impression of toasted crusts, caramel, and dark fruit such as raisins. The sweetness is substantial but balanced by a moderately low hop bitterness and a smooth, clean lager finish. Subtle oak tannins add complexity to the lingering, malty aftertaste without becoming overtly woody or burnt.
Mouthfeel. Full-bodied and viscous with a smooth, velvety texture. Carbonation is moderate-low, enhancing the creamy mouthfeel. A pleasant, warming glow from the alcohol is noticeable but lacks any harshness or fusel heat.
