This Winter Saison presents a sophisticated seasonal evolution of the farmhouse style, harmonizing Belgian fermentation with British terroir. The aromatic profile is defined by expressive fruity esters and peppery phenols from the Belgian yeast, layered over distinct notes of winter berries provided by seasonal UK hops. Unlike leaner summer versions, traditional UK malts lend a more substantial, toasty backbone and a deeper amber hue. Despite the increased malt complexity, the beer remains exceptionally dry and spritzy on the palate. It concludes with a crisp, bitter finish, balanced by a gentle alcoholic warmth suited for colder months.
Appearance. Medium amber to light copper (10–14 SRM). Features a long-lasting, dense, rocky ivory head with persistent Belgian lace. The beer is unfiltered and hazy with visible effervescence.
Aroma. High aromatic intensity. Moderate to high fruity esters of pear and red apple are joined by a distinct winter berry character from seasonal UK hops. Spicy, black pepper yeast phenols are prominent, supported by a bready, slightly toasty malt character from traditional UK malts.
Taste. Initial impression is dry and spicy. Malt flavor is moderate, showcasing biscuity and grainy notes from the UK malts. Hop flavor is moderate with floral and berry-like notes. Bitterness is moderate to firm but balanced by the high attenuation. The finish is very dry and refreshing with a lingering peppery aftertaste.
Mouthfeel. Medium body with very high carbonation and a prickly, effervescent sensation. A light, well-integrated alcoholic warmth is present. Low astringency and no cloying sweetness.
