ROTT.STACK is an indulgent, breakfast-inspired Imperial Stout that presents a decadent fusion of roasted complexity and jammy sweetness. It pours a viscous, motor-oil black with an aroma defined by rich maple syrup, dark chocolate, and an intense burst of real fruit. The sensory experience is dominated by thick layers of espresso and charred malt, which are expertly balanced by the tart acidity of the fruit additions. At 10.5% alcohol, a steady, integrated warmth envelops the palate, enhancing the velvety, chewy texture. This is a bold, modern interpretation of the style, where lingering notes of berry and caramelized sugar provide a harmonious, bittersweet finish.
Appearance. Jet black and completely opaque (SRM 40+). Pours with a thick, creamy, deep tan to dark brown head that shows moderate retention. High viscosity is apparent through visible legs on the glass.
Aroma. High intensity. Rich aromas of bittersweet chocolate and espresso-like roast meld with a prominent, sweet maple character and deep, jammy fruit esters. Subtle notes of black licorice and vinous alcohol are present, with very low earthy hop character.
Taste. Initial impression is intensely sweet and malty, followed by a wave of dark fruit tartness and heavy roast. Flavors of dark cocoa, burnt grain, and maple syrup dominate the mid-palate. Bitterness is medium-high but softened by the residual sugar and fruit pulp. The finish is long and warming with a lingering berry and roasted malt aftertaste.
Mouthfeel. Full to very full-bodied with a luscious, velvety, and almost chewy texture. Carbonation is low to moderate. A smooth, noticeable alcohol warmth is present without being harsh or solventy.
