Imperial IPA 8 º
This Double IPA presents an explosive aromatic profile driven by Mosaic, Nectaron, and Comet hops, delivering a saturated blend of ripe stone fruit, tropical berries, and zesty grapefruit. The addition of wheat creates a plush, velvety foundation that carries the intense hop saturation with grace. Uniquely conditioned on multi-oak, the finish gains a subtle structural depth and a hint of woodsy dryness that balances the fruit-forward intensity. With a well-integrated 8% ABV, it offers a sophisticated balance of assertive bitterness and soft, grainy malt, concluding in a clean, lingering resonance of citrus peel and resin.
Appearance. Pale gold to light orange (5-7 SRM). Moderate haze from the high wheat content and dry-hopping. Features a dense, persistent white head with excellent lacing.
Aroma. High intensity hop aroma featuring prominent notes of peach and nectarine from Nectaron, blueberry and tropical fruit from Mosaic, and a zesty, wild grapefruit character from Comet. Supportive grainy, bready malt background from the wheat. A very subtle, clean woodsy note from the oak conditioning is present but does not overshadow the fruit.
Taste. Initial impression of intense tropical fruit and stone fruit sweetness, quickly followed by a firm but smooth bitterness. Mosaic provides dark berry and mango flavors, while Nectaron adds juicy peach. The Comet hops bring a resinous, citrusy edge to the mid-palate. Low, supportive bready malt flavor. The finish is dry and clean with a light oak-derived structure and lingering hop resin.
Mouthfeel. Medium body with a soft, creamy texture contributed by the wheat. Moderate carbonation. Provides a restrained, smooth alcohol warmth without being hot or solventy. Very low astringency despite the oak and high hop load.
