Imperial IPA 8 º
This Double IPA showcases an intense hop profile driven by the hallmark combination of Citra and Mosaic hops. The sensory experience opens with powerful aromas of ripe mango, passion fruit, and bright tangerine, complemented by subtle blueberry and resinous pine. A complex grain bill featuring multiple varieties of oats and wheat provides a soft, bready foundation and a plush, velvety texture that supports the 8% alcohol with integrated, smooth warmth. The palate follows the nose with concentrated citrus zest and tropical fruit flavors, leading to a firm but clean bitterness. It concludes with a medium-dry, lingering finish of hop oils and a gentle, grainy sweetness.
Appearance. Deep gold to pale orange in color (SRM 7-9). Supports a moderate-sized, creamy, off-white head with excellent persistence and thick lacing. High haze and opacity due to the significant oat and wheat content.
Aroma. High intensity hop aroma featuring prominent tropical fruit (mango, papaya), citrus (grapefruit, orange peel), and stone fruit esters. A supportive, grainy-sweet, and slightly doughy malt character is present. Fermentation is clean with very low fruity esters and a subtle, well-integrated alcohol note.
Taste. Strong, complex hop flavors dominated by tangerine, tropical fruit, and a hint of dank resin. Malt flavor is low to moderate, presenting as clean, soft bread and cereal grains. Bitterness is high but smooth, lacking any harsh or grassy edges. The balance is heavily skewed toward hops, finishing medium-dry with a lingering citrus and floral aftertaste.
Mouthfeel. Medium-full body with a notable creaminess and smooth, velvety texture derived from the heavy use of oats and wheat. Carbonation is moderate. Alcohol warmth is noticeable but restrained and smooth, without any solventy harshness or hop-derived astringency.
