Rooster's Brewing Co Better Late Than Never
Better Late Than Never is a vibrant Hazy IPA that presents a luscious sensory profile centered on a heavy dry-hop regimen of Mosaic and Simcoe. On the nose, intense aromas of fleshy mango and zesty lemon collide with a classic resinous pine depth. The palate is saturated with juicy tropical fruit flavors, where the Mosaic provides ripe stone fruit notes while Simcoe adds a sophisticated citrus and forest-floor complexity. With its soft, pillowy texture and restrained bitterness, this beer remains remarkably easy-drinking, finishing with a clean, bready malt sweetness and a lingering impression of tropical fruit nectar.
Appearance. SRM 4. Straw to light gold with a distinct, opaque hazy shine. Features a medium, rocky, meringue-like white head with high retention and thick lacing.
Aroma. High intensity hop-forward aroma dominated by mango, lemon, and tropical stone fruits. A supporting layer of resinous pine and light blueberry is evident. Malt is clean, neutral, and lightly bready in the background with no caramel or toast.
Taste. High fruity hop flavor of ripe mango and citrus zest. Low to medium-high perceived bitterness that is soft and well-integrated. Medium-low grainy malt flavor provides balance. The finish is off-dry to medium, leaving a smooth, fruit-filled aftertaste without any harshness.
Mouthfeel. Medium body with a soft, smooth, and slightly creamy texture. Moderate carbonation with no astringency or hop burn. Very light, well-integrated alcohol warmth.
