This Imperial Stout is a decadent, layered experience, showcasing nine months of maturation in Bourbon and French Oak. It leads with an intense sensory bouquet where rich Tahitian vanilla and dusty cacao from Gabriels meet the banoffee-like complexity of Colombian coffee from Margaret River Roasting Co. The prolonged aging imparts a sophisticated dessert wine oxidation, complementing notes of sticky raisins and dark espresso roast. It presents a massive, velvety profile where the interplay of roasted malts and oak vanillins creates a smooth yet powerful character. The experience concludes with a firm bitterness that balances the luxurious sweetness, resulting in a harmonious, lingering finish of dark chocolate and warming spirit.
Appearance. Deep dark reddish-brown to jet black and opaque (40 SRM). Features a thick, creamy tan to mocha head with moderate retention and visible legs due to high viscosity and alcohol content.
Aroma. High intensity with a complex blend of dark espresso roast, dusty cocoa, and heavy oak vanillins. Prominent notes of Tahitian vanilla and bourbon-soaked wood are complemented by banoffee-driven coffee characters and a vinous, dessert wine-like oxidation. Low dark fruit esters resembling raisins.
Taste. Initial impression is rich and sweet, quickly followed by intense flavors of dark chocolate, sticky raisins, and Colombian coffee. The malt profile is heavy on espresso roast and cocoa. A firm but forgiving bitterness (approx. 60-70 IBU context) prevents the beer from becoming cloying. The finish is long and bittersweet with lingering notes of vanilla and aged port.
Mouthfeel. Very full-bodied and chewy with a velvety, luscious, and sticky texture. Carbonation is low to moderate. A smooth, noticeable alcohol warmth is present but well-integrated, lacking any harshness or solvent qualities.
