This audacious Brett Beer, built on a foundation of a barrel-fermented lager, presents a sophisticated interplay between clean cold-fermentation and rustic wild yeast. The twenty-two months of barrel maturation impart a subtle woody depth that complements a bold Brettanomyces profile. Expect a sensory journey of barnyard funk, wet hay, and earthy undertones, lightened by a secondary fermentation that leaves the body remarkably lean and effervescent. Despite its extended aging, it retains a crisp, bubbly personality, balancing its funk with a dry, vinous finish. The result is a spirited, unconventional lager that marries traditional barrel techniques with assertive wild-yeast exploration.
Appearance. Straw to light gold (SRM 3-5); moderate white head with fair retention and slight lacing; hazy appearance due to extended contact with Brettanomyces and barrel aging.
Aroma. High intensity funk with prominent notes of barnyard, wet hay, and leather; moderate fruity esters of apricot and dried citrus; low grainy-sweet malt character; light oaky vanilla and earthy wood notes from the 22-month barrel aging; no hop aroma detected.
Taste. Initial impression is bone-dry and crisp; low grainy malt flavor is quickly overtaken by complex Brettanomyces character including leather, earth, and a light stone-fruit tartness. Hop bitterness is low, providing just enough structure to balance the lean body. The finish is very dry, clean, and lingering with a pleasant funky aftertaste and a touch of woody tannin.
Mouthfeel. Medium-light body, attenuated significantly by the Brettanomyces; high carbonation providing a bubbly, prickly sensation; low alcohol warmth; very low astringency from the oak barrels; no creaminess.
