This Imperial Stout presents a decadent fusion of roasted intensity and vinous elegance. A foundation of bittersweet chocolate and espresso provides a dark, robust canvas for the addition of local Shiraz grapes. These grapes introduce concentrated layers of blackberry, plum, and a sophisticated jammy character that intertwines with the six-month oak aging. The wood contributes subtle vanilla and structural tannins, lending a dry, refined edge to the otherwise opulent malt profile. Expect a harmonious interplay between burnt grain notes and dark fruit acidity, culminating in a warming, complex finish that showcases both the strength of the base beer and the unique regional fruit influence.
Appearance. Opaque, jet black with deep ruby highlights at the edges. A persistent, dense, dark tan head leaves significant lacing, while high viscosity is evidenced by prominent legs on the glass.
Aroma. High intensity aroma featuring a rich blend of dark chocolate, charred wood, and roasted coffee. The Shiraz grapes contribute a strong vinous presence of blackcurrant and plum, complemented by oak-derived vanilla and a light, peppery spice. Noticeable but smooth alcohol warmth.
Taste. Initial impressions of dark cocoa and toasted malt are quickly met by a vibrant, dark fruit character from the Shiraz grapes. Medium-high bitterness from roasted grains and hops is balanced by a lingering fruit sweetness. Notes of leather, vanilla, and oak emerge mid-palate, leading to a long, warming finish with a slightly tannic, vinous aftertaste.
Mouthfeel. Full-bodied and velvety with a thick, chewy texture. Carbonation is moderate-low, emphasizing the beer's richness. A distinct, pleasant alcohol warmth is present, reflecting the high gravity without being harsh or solventy.
