Amplification is a vibrant Straight Sour Beer that captures the essence of a sun-drenched orchard. Building on a barrel-aged Saison base, it unfolds with an expressive medley of strawberry, passionfruit, and peach. The brewery’s house culture imparts a clean, crisp lactic acidity that cuts through the juicy fruit profile. High carbonation and a rustic farmhouse character from its time in the Jindong barrel room provide an effervescent, refreshing experience. Expect a harmonious balance where the bready, pale malt serves as a canvas for the intense fruit salad character, finishing exceptionally dry with a lingering tartness and vibrant fruit punchbowl complexity.
Appearance. Pale straw to light gold (3–4 SRM); features a tall, white, fizzy head with poor retention. Clarity is somewhat hazy, reflecting the heavy infusion of strawberry and peach.
Aroma. High intensity lactic sourness is dominant, immediately followed by a complex fruit bouquet of ripe strawberry and tropical passionfruit. Subtle peach esters and a low, crackery malt note are present, alongside a faint woody, farmhouse character from the house culture.
Taste. A clean, sharp lactic sourness leads into a rush of fresh strawberry and tangy passionfruit. The peach provides a rounded, stone fruit mid-palette. Low malt flavor suggests bready or biscuity notes. Hop bitterness is undetectable, allowing the vibrant fruit and acidity to drive the balance. The finish is bone-dry and crisp.
Mouthfeel. Medium-light body with high, effervescent carbonation. Crisp, palate-cleansing acidity is prominent, accompanied by a very light, well-integrated alcohol warmth.
