Rock Brewery’s Testa Di Moro reimagines the classic Belgian Tripel through a modern lens, replacing traditional continental noble hops with vibrant American hops to create a bold, hoppy experience. At 8.5% ABV, it presents a complex, seamless bouquet where peppery, clove-like phenols and citrusy esters dance with resinous American hop notes. The palate is defined by a crisp, grainy-sweet malt backbone that supports a firm bitterness and a remarkably dry, effervescent finish. This fusion maintains the style's signature deceptive drinkability while elevating the fruity profile, offering a refreshing, punchy interpretation of a monastic classic.
Appearance. Deep yellow to pale amber (5–7 SRM) with excellent clarity and high effervescence. It supports a long-lasting, creamy, rocky white head that leaves dense, characteristic Belgian lace on the glass.
Aroma. High intensity and complex; moderate to significant peppery phenols and citrusy esters (lemon and orange) are primary. The use of American hops introduces a pronounced citrus and resinous character, departing from traditional floral spice. Malt is light with a soft, honey-like impression, supported by soft, spicy alcohol.
Taste. Initial grainy-sweet malt impression followed by moderate to high bitterness accentuated by American hop flavors of grapefruit and pine.
