Bikini Beach is an innovative Fruit Beer that bridges the gap between a lush tropical juice and a sharp, dry-hopped ale. The sensory experience is lead by a massive, authentic mango presence that smells of sun-ripened fruit and exotic nectar. This intensity is matched by a vigorous dry-hopping regimen that introduces layers of citrus and resinous undertones. On the palate, the mango provides a fleshy, succulent mid-palate that is rapidly balanced by a firm, refreshing bitterness. The result is a vibrant, aromatic beer that uses its fruit character to enhance complexity rather than provide simple sweetness, finishing remarkably clean and crisp.
Appearance. Deep gold to pale amber (SRM 7-9) with a distinct orange hue from the mango addition. Features a tall, frothy white head with excellent retention and thick lacing. The clarity is moderately hazy, indicative of both the heavy dry hopping and fruit solids.
Aroma. High intensity of fresh, pulpy mango dominates the initial impression. Supporting this are moderate-high hop aromas of grapefruit zest and pine. The malt is subtle, offering a low bready-sweet background, while the fermentation remains clean with no significant yeast esters or phenols.
Taste. The initial taste is a burst of juicy mango, followed quickly by a moderate-high hop bitterness. The malt profile is lean and crackery, providing just enough structure to support the fruit.
