Prince de Waterloo reimagines the classic Witbier through a wild and barrel-aged lens. Fermented with a house blend of wild yeast and conditioned for four months in neutral barrels, this elevated 7.6% ABV ale offers a sophisticated sensory bouquet. The profile radiates with aromatic cardamom, delicate orange blossom, and a spicy touch of clove, woven into a base of bready wheat. On the palate, it delivers a refreshing and bone-dry experience, distinguished by a gentle lactic acidity that brightens the spice complex. This collaboration between Robin and 4 Origines balances rustic complexity with an elegant, effervescent finish.
Appearance.3-4 SRM. Very pale straw to deep yellow with a characteristic milky, whitish-yellow haze. Dense, white, moussy head with excellent retention and fine lacing.
Aroma.High intensity. Pronounced floral orange blossom and citrus zest are complemented by a complex spice profile of cardamom and clove. A moderate bready, grainy wheat malt backbone supports subtle earthy funk from the house wild yeast blend.
Taste.Initial impression is floral and bright. Bready, grainy malt flavors are layered with zesty orange and herbal cardamom. The house fermentation adds a soft, refreshing acidity and a spicy clove character. Bitterness is low, supporting a very dry, crisp finish without any harshness.
Mouthfeel.Medium body with a smooth, light creaminess from the wheat. High carbonation creates a lively, effervescent character. A well-integrated alcohol warmth is noticeable but smooth, finishing very dry and refreshing.
