This Saison offers a vibrant interpretation of a farmhouse classic, elevated by the addition of Mirabelle plums. The sensory profile is defined by a delicate marriage of yellow fruit and characteristic Belgian yeast esters. Aromatically, the beer leads with distinct notes of stone fruit and a subtle, nutty frangipane sweetness. On the palate, a marked acidity provides a bright, tart structure reminiscent of sour peach candies, while the fruit’s natural generosity provides a rounding counterpoint. The finish is exceptionally dry and refreshing, featuring a light, skin-like astringency from the plums that lingers alongside a crisp, effervescent carbonation.
Appearance. Pours a hazy, pale gold to orange hue (7–10 SRM). It is topped by a long-lasting, dense, rocky white head that leaves significant lacing on the glass.
Aroma. High intensity of fruity-spicy yeast esters. Dominant notes of yellow plum and stone fruit are joined by a distinct almond-like frangipane character. Secondary aromas include cracked black pepper and a soft, grainy malt backbone.
Taste. Initial impression is sharply tart and fruity, mimicking sour peach candy. The Mirabelle plum flavor is deep and authentic, supported by a low, grainy malt sweetness. Very high attenuation leads to an exceptionally dry finish. Hop bitterness is low, as the marked acidity provides the structural balance. Subtle phenolic spice and a lingering fruit-skin tartness define the aftertaste.
Mouthfeel. Medium-light body with very high, effervescent carbonation. Features a light, pleasant astringency from the fruit skins and a subtle, well-integrated alcohol warmth.
