The nose is dominated by fresh, jammy raspberry and a complex vinous character derived from twenty-one months in Sauvignon Blanc barrels, offering notes of white grape and soft oak. On the palate, a highly attenuated, bone-dry finish highlights peppery yeast phenols and a refreshing fruit acidity. The extended aging provides a structural depth, balancing the bright berry fruit against a soft, grainy malt backbone and a subtle, lingering spicy aftertaste.
Appearance. Deep ruby-pink to vibrant red in color with a dense, long-lasting pink-tinged ivory head. Significant hazy clarity due to the massive fruit addition and lack of filtration; visible sediment may be present.
Aroma. High intensity raspberry aroma that is both fresh and jammy. A complex fermentation profile yields moderate peppery phenols and subtle pome fruit esters, complemented by vinous white grape and toasted oak from the Sauvignon Blanc barrels. Malt is low and lightly grainy, while hop character is masked by the fruit.
Taste. The initial impression is a sharp, tart burst of raspberry followed by a dry, grainy malt center. Yeast-derived flavors of black pepper and spicy phenols are moderate, integrating with a light vinous acidity. Hop bitterness is low, as the fruit and barrel tannins provide the primary balance. The finish is very dry and effervescent with a lingering, tart berry aftertaste.
