This Wild Specialty Beer presents a vibrant sensory profile defined by a massive addition of 500kg of Cherry and Peach purée. The aroma leads with high intensity, offering a complex blend of tart red fruit and stone fruit sweetness balanced by a distinct lactic tang and subtle wild funk. On the palate, the bright acidity of the cherry cuts through the softer, juicy fleshiness of the peach, creating a multilayered fruit experience. A light, crisp malt base supports the fruit without intruding, leading to a dry, puckering finish that highlights the refreshing acidity and the collaborative spirit of its creation.

Appearance. Deep pink to reddish-amber hue (10-15 SRM) from the cherry addition. The head is light pink, with moderate retention that fades to a thin collar. Hazy to opaque due to the significant fruit purée volume.

Aroma. High intensity. Dominated by sharp, acidic cherry and floral, jammy peach. A clean lactic sourness is present, accompanied by moderate earthy and hay-like funk from the wild fermentation. Malt is low, providing a hint of crackery dough. No hop aroma.

Taste. Sharp, refreshing acidity is the first impression. Strong cherry tartness and juicy peach flavors are well-integrated. The fruit sweetness is largely fermented out, leaving authentic fruit esters and skins. Bitterness is very low, with the acidity providing the primary structure. The finish is very dry and crisp with a lingering stone fruit aftertaste.

Mouthfeel. Light to medium-light body. Carbonation is high and effervescent, which helps lift the fruit weight. No alcohol warmth is perceived. There is a slight tannic astringency from cherry skins.
