This vibrant Saison is defined by a rustic backbone of Pale and Wheat malts, providing a soft, grainy foundation for a modern hop profile. Dry-hopped with Simcoe and Columbus, the aroma bursts with tropical fruit, resinous pine, and herbal depth, while Magnum provides a clean base bitterness. The addition of Seville sour oranges elevates the citrus character, merging seamlessly with peppery Belgian Ale yeast esters. It pours a hazy gold with a rocky white head, leading to a complex palate of zesty citrus and spice. The finish is remarkably dry and effervescent, leaving a lingering, refreshing bitterness that emphasizes its highly attenuated character.
Appearance. Pale gold with a slight orange hue (6 SRM); hazy appearance due to the inclusion of wheat and lack of filtration; large, dense, rocky white head with excellent retention and Belgian lacing.
Aroma. Moderate to high intensity; notable tropical fruit and pine notes from Simcoe and Columbus dry-hopping; distinct zesty citrus and bitter orange peel from the Seville oranges; moderate peppery yeast phenolics; low grainy, bread-like wheat malt character.
Taste.
