Ridgeway Brewing

This English IPA presents a vibrant sensory profile characterized by its intense floral hop presence and unique wine-like tannin structure. Pouring with a champagne-like sparkle from its bottle conditioning, the beer reveals deep resins and a firm bitterness that balances a medium-low bready malt backbone. While the initial impression is dominated by fresh floral notes, the maturation process introduces a subtle spicy character that softens the early tannic grip. Its highly attenuated, dry finish and crisp effervescence make it an elegant example of the style, delivering a classic British experience with a distinctively sophisticated, structured mouthfeel and lingering, resinous complexity.

Appearance. Deep golden to copper-amber; brilliant clarity with high effervescence. Features a moderate-sized, persistent, off-white head with fine-beaded bubbles and excellent lacing.

Aroma. High intensity floral hop aroma with distinct notes of resin and a developing spicy-peppery character. Moderate-low bready and biscuity malt support. Low fruity esters are present, alongside a clean, fermentation-derived profile.

Taste. Assertive hop bitterness and flavor lead the palate, showcasing floral and resinous notes. Malt flavor is medium-low, providing a bready, slightly toasted base. The finish is very dry with a wine-like tannin structure and a lingering, clean bitterness that remains balanced and never harsh. Light spicy hop notes emerge as the beer warms.

Mouthfeel. Medium body with high, champagne-like carbonation that provides a crisp, lively sensation. Features a unique, subtle tannic astringency that contributes to the dry finish. Alcohol warmth is very low and well-integrated.

Dal carattere aromatico e una buona nota amarognola in finale è una birra di stampo decisamente inglese con qualche accenno di america (luppolo cascade), estremamente bilanciata, aromatica e di infinita bevibilità. La struttura è consistente, con un rispettabile corredo di malti dolci a contrastare le note più amarognole dei luppoli.
