Ribella Madonna is a luminous and refreshing Witbier that captures the essence of Corsica through the addition of wild Corsican citron peel. This citrus medica corsica variety infuses the beer with an aromatic complexity that transcends standard orange zest, offering a bright, perfumy lemon character. The base features a delicate bready maltiness from unmalted wheat, while the fermentation provides subtle peppery yeast esters. On the palate, a gentle interplay of sweetness and mild acidity creates a crisp profile. Effervescent and light-bodied, it finishes clean with a lingering herbal spice and a touch of wild citrus pith, making it an quintessential Mediterranean summer ale.
Appearance. Very pale straw with a milky, whitish-yellow shine due to significant starch haze. Topped by a dense, white, moussy head with excellent retention and light lacing.
Aroma. Moderate intensity featuring bready, grainy wheat malt and a distinctively aromatic zesty citron character. Complemented by moderate spicy coriander and light peppery yeast esters, with a subtle background of honey.
Taste. Initial flavors of bready malt and grainy wheat lead into a prominent zesty, citrusy fruitiness from the Corsican citron. Subtle herbal and spicy notes from coriander are well-balanced against a very low hop bitterness. The profile balances a light sweetness with a refreshing touch of acidity, finishing dry and crisp without any harshness.
