Ribella Inferna is an assertive American Stout that pushes the boundaries of the style with an intense, evocative sensory profile. The foundation is built on deeply roasted malts, delivering powerful layers of dark chocolate and espresso. This base is uniquely enhanced by the inclusion of tobacco leaves, which contribute a profound earthy and slightly smoky depth. A bright, sharp zest of ginger provides a spicy contrast to the malt weight, while the addition of Cayenne pepper introduces a creeping, well-integrated heat on the palate. Resin-forward American hops provide a firm bitterness that balances the rich sweetness and ensures a lingering, complex, and warming finish.
Appearance. Jet black and opaque (SRM 40+). It features a large, persistent, tan-colored head with excellent lacing as it recedes.
Aroma. High intensity with a dominant roasted coffee and bittersweet chocolate character. Earthy and savory notes from tobacco leaves are prominent, accompanied by a sharp, spicy ginger aroma. Low resiny hop notes and a subtle, peppery phenol presence from the Cayenne are evident.
Taste. The initial impression is one of intense roasted grain, tasting of burnt coffee and dark chocolate. Mid-palate reveals earthy tobacco and a snappy ginger bite. Firm bitterness provides balance against a low caramel sweetness. The finish is dry and complex, marked by a lingering roasted char and a distinctive, warming heat from the Cayenne pepper.
Mouthfeel. Full-bodied and creamy with moderate-high carbonation. A notable warmth is present, derived from both the 7% alcohol and the spicy Cayenne heat. It exhibits low roast-derived astringency and a smooth, coating texture.
