This Imperial Stout presents a sophisticated evolution of the Deep Wood series, layering rich Mexican cocoa nibs over a base refined by French oak. At cellar temperature, the initial impressions of roasted malt and bittersweet chocolate give way to a complex vanilla character derived both from hand-split beans and the seasoned wood. The integration of high-ABV warmth with the earthy, spiced notes of the cocoa creates a dynamic sipping experience. As it warms, the velvety textures of the French-oak-augmented blend reveal comforting nuances of toasted marshmallow and toasted oak, maintaining a harmonious balance that avoids being overly syrupy while celebrating its massive scale.

Appearance. Opaque, jet black (40+ SRM) with a thick, creamy, deep tan head. Excellent viscosity is evidenced by prominent legs forming on the glass.

Aroma. High intensity with a rich blend of bittersweet chocolate and espresso roast. Prominent vanilla and toasted oak aromatics meld with the earthy, spicy scent of Mexican cocoa nibs. Subtle background esters of dried figs and prunes are present, with a smooth, well-integrated alcohol note and very low hop character.

Taste. Initial impression is of dense dark chocolate and creamy vanilla. The malt profile is complex, featuring heavy roast, cocoa, and toasted bread. Bitterness is moderate to firm, providing essential balance to the high gravity. The finish is long and warming, featuring lingering notes of dark chocolate, oak tannins, and a hint of marshmallow sweetness without being cloying.

Mouthfeel. Full-bodied and exceptionally chewy with a velvety, luscious texture. Carbonation is low to moderate. A significant, smooth alcohol warmth is present throughout, consistent with its high strength, but lacks any harsh or solventy edges.
