Appearance. Copper to dark brown in color (SRM 14–22). This beer displays a significant haze from the rye and yeast. It features a large, off-white to tan, creamy head with excellent retention and thick lacing.
Aroma. Moderate to high intensity. Strong spicy rye graininess is balanced by yeast-derived esters of banana and phenols of clove. Complementary notes of toasted bread, light nuttiness, and a touch of chocolate are present. Hop aroma is absent.
Taste. Initial malt sweetness yields to a rich, grainy rye bread flavor and distinct spiciness. Phenolic clove and fruity banana esters are prominent. A light chocolate character adds depth without being overly sweet. Hop bitterness is low, allowing the spicy grain and yeast character to lead into a clean, lingering, spicy finish.
Mouthfeel. Medium to medium-full body; the rye provides a characteristic oiliness and increased viscosity. Carbonation is moderate to high, providing a refreshing spritz. No astringency is present despite the high grain content.
