Appearance. Brilliant ruby red with a delicate pinkish-white head that fades quickly to a thin collar. Clarity ranges from clear to slightly hazy with fine, persistent bubbles.

Aroma. Moderate to high intensity. Dominant notes of fresh tart cherries and cherry skins are layered over a wild fermentation profile featuring leather, wet hay, and subtle lemon. A light wheaty malt presence provides a soft backing.

Taste. The initial impression is sharply acidic and refreshing, followed by deep flavors of sour cherries and cherry pits. Fermentation character adds complexity with earthy, barnyard funk and a touch of peppery spice. Finishes very dry and clean with a lingering lactic tartness and no hop bitterness.
