This refreshing Mediterranean-inspired Witbier showcases an intricate spice profile centered on thyme and coriander. The base of Pilsner malt and spelt provides a nutty, rustic graininess that anchors the sensory experience. Aromas of grapefruit and curaçao peel offer a bright, citrusy lift, complemented by the delicate floral and herbal notes of Hallertau Mittelfrüh hops. On the palate, the thyme emerges prominently, weaving through a creamy, unfiltered texture. A crisp, dry finish and lively carbonation highlight the beer's natural, bottle-conditioned character, making it a nuanced and highly sessionable take on a Belgian classic enhanced by alternative grains.

Appearance. Straw to light gold (3-4 SRM). Opaque to very hazy due to yeast sediment and protein from the spelt and unmalted wheat. Features a dense, white, mousse-like head with excellent retention and moderate lacing.

Aroma. Moderate-high intensity featuring a complex herbal-citrus blend. Bright notes of grapefruit and curaçao zest are dominant, followed by a distinct savory thyme aroma and peppery coriander. The malt character is bready and slightly nutty from the spelt. Low floral and spicy hop notes from Hallertau Mittelfrüh are present. Clean fermentation with subtle fruity esters.

Taste. Initial impression is refreshingly crisp and citrus-forward. A bready, slightly sweet Pilsner malt and nutty spelt flavor forms the mid-palate. Thyme provides a lingering herbal complexity that harmonizes with the spicy coriander. Hop bitterness is low, providing just enough balance. The finish is dry, clean, and effervescent with a slight citrus pith aftertaste.

Mouthfeel. Medium-light body with a smooth, slightly creamy texture from the alternative grains. High carbonation from bottle conditioning provides a sparkling, refreshing tingle. Alcohol warmth is non-existent. No astringency despite the use of spices and citrus peels.
