Reptilian Solstici D’Estiu
This American IPA presents a rustic twist on the classic style, utilizing organic Kamut alongside traditional barley malt to create a unique grainy foundation. The sensory profile is led by a vibrant hop presence, delivering notes of citrus and resinous pine that dominate the bouquet. On the palate, the ancient grain lends a subtle nuttiness and a light, earthy sweetness that balances the assertive, firm bitterness characteristic of the style. Unfiltered and bottle-conditioned, it maintains a lively carbonation and a crisp, dry finish, offering a bright, refreshing expression of a hoppy ale with an artisanal, textured character.
Appearance. Medium gold to light amber in color; hazy and unfiltered with visible yeast sediment from the bottle fermentation; thick, persistent white head with excellent lacing.
Aroma. High hop intensity featuring prominent citrus zest and resinous pine; supported by a unique grainy, slightly nutty malt character from the Kamut; clean fermentation with very low fruity esters and no detectable dimethyl sulfide.
Taste. Initial impression of assertive hop bitterness followed by flavors of grapefruit and pine; the Kamut provides a rustic, toasted grain backdrop to the barley malt; medium-high bitterness leads into a dry, clean finish with a lingering hoppy aftertaste.
Mouthfeel. Medium-light body with a smooth but slightly textured mouthfeel attributed to the ancient grain proteins; high carbonation due to being fermented within the bottle; no alcohol warmth present.
