This Imperial Red Ale presents a bold sensory experience, expertly masking its gluten-free composition with a robust, caramelized malt foundation. The spotlight belongs to the single-hop addition of Sorachi Ace, which imparts a distinctive and pungent aromatic profile of bright lemon zest and creamy coconut. Its deep amber hue and full-bodied presence provide a luxurious stage for the interplay between sweet toffee-like malts and a firm, resinous bitterness. Appearance. Deep amber to coppery-red with a slight haze characteristic of alternative grain proteins. Topped by a dense, off-white head with good retention and persistent lacing.
Aroma. High intensity with a complex hop-forward profile featuring lemongrass, lime peel, and a specific coconut sweetness. The malt backbone supports these with rich notes of burnt sugar, caramel, and a light toasted-nut character from the alternative grains.
Taste. Initial impression of sweet caramel and bready malt, quickly met by aggressive hop flavors of lemon oil and shredded coconut. A firm bitterness balances the malt richness. Fermentation is clean, though subtle esters may hint at dark berries. The finish is long and slightly resinous, with lingering caramel and a clean bitterness.
Mouthfeel. Full-bodied and viscous with moderate carbonation. A noticeable but smooth alcohol warmth provides a velvety texture. Despite the alternative grain base, the mouthfeel remains creamy and substantial with no harsh astringency.
