This Imperial Stout presents an imposing sensory profile defined by its three-month maturation in Port wine oak barrels. The base beer offers a robust foundation of bittersweet chocolate and espresso, which seamlessly integrates with the vinous complexity of the Porto wood. Expect a decadent layering of dried figs, raisins, and dark currants against a backdrop of toasted oak and subtle vanilla. The high alcohol content provides a sophisticated warmth that elevates the rich, malt-driven sweetness. It is a harmonious marriage of intense roasted grains and the fortified wine’s elegant oxidative character, resulting in a deep, contemplative sipping experience.

Appearance. Jet black and fully opaque (40 SRM). It pours with a thick, persistent deep tan head that leaves moderate lacing. Due to the high gravity and alcohol, slow-moving legs are visible on the glass.

Aroma. High intensity and complex. Dominant notes of dark chocolate, roasted coffee, and black licorice are layered with strong esters reminiscent of plums and prunes. The Porto barrel aging contributes distinct aromas of fortified wine, toasted oak, and a hint of dark fruit.

Taste. Initial impression is of intense bittersweet chocolate and heavily roasted grain. The mid-palate reveals a rich tapestry of dried fruits—raisins and figs—intertwined with the sweet, oaky character of Port wine. Firm bitterness provides necessary balance to the thick malt body. The finish is long, warming, and slightly vinous with a lingering cocoa aftertaste.

Mouthfeel. Very full-bodied and chewy with a velvety, luscious texture. Carbonation is low to moderate, enhancing the beer's substantial weight. A smooth, well-integrated alcohol warmth is prominent but not sharp or solventy.
