Pop My Cherry reimagines the traditional Berliner Weisse through a decadent, dessert-inspired lens, delivering a vibrant sensory experience reminiscent of a cherry cheesecake. At 6% ABV, this interpretation offers a sturdier backbone than historical examples, providing a lush stage for intense tart cherry additions. The aroma is a sharp interplay between clean lactic acidity and rich stone fruit, bolstered by a subtle graham cracker sweetness from the wheat-heavy grist. On the palate, the characteristic doughy wheat profile is transformed into a pastry-like complexity. Bracingly carbonated and refreshingly sour, this beer balances bold fruit expression with a velvety, cream-like finish.
Appearance. SRM 10–15 (vibrant hazy pink to reddish-amber). Large, frothy, pale pink head with poor retention. Hazy to opaque due to fruit solids and wheat proteins.
