This American Porter presents a sophisticated sensory transformation through five years of Islay whisky barrel aging. The profile is defined by a bold, medicinal peat smoke and coastal brine that seamlessly integrates with a decadent Imperial Stout blend. On the palate, rich layers of dark chocolate and espresso meet rugged charred oak and iodine. The Islay influence provides a pungent, earthy smokiness that counters the velvety malt sweetness, while the extended aging period develops complex notes of dried fruit and leather. It concludes with a long, warming finish where the lingering peat smoke and a firm roasted bitterness remain perfectly balanced.
Appearance. Very dark brown to near black (SRM 38), appearing opaque in the glass. It features a thick, creamy tan head with excellent retention and persistent lacing.
Aroma. High intensity with dominant medicinal peat, wood smoke, and campfire notes. A rich malt backbone follows, providing scents of dark chocolate, toasted grains, and light espresso. Very low earthy hop character and a noticeable but smooth alcohol warmth.
Taste. A complex initial impression of smoky peat and charred wood, followed by deep roasted malt flavors of cocoa and black coffee. The Imperial Stout influence adds a supporting malty richness. Bitterness is medium-high, balancing the residual sweetness. The finish is dry and lingering, characterized by sea salt, smoke, and dark malt toastiness.
Mouthfeel. Medium-full body with a velvety, mouth-coating texture. Carbonation is moderate. A noticeable, pleasant alcohol warmth is present without being sharp. Very low astringency from the roasted grains.
