This Wild Specialty Beer presents a stunning sensory profile centered on the inclusion of premium Scottish raspberries. Appearance. Bold, devilish red to deep pink hue (SRM 5-7 tinted). The head is pinkish and frothy with moderate to low retention; clarity is bright with a slight, natural fruit haze.

Aroma. High intensity of fresh, jammy Scottish raspberries dominates the nose. Subtle underlying lactic tartness provides a clean, acidic counterpoint. Low grainy malt and negligible hop aroma; fermentation esters are primarily berry-derived with a very faint, rustic wild character.

Taste. Initial impression is a burst of juicy raspberry fruit. A sharp but approachable lactic acidity balances a perceived fruit sweetness, though the finish is decidedly dry. Malt flavor is low and cracker-like, serving only as a neutral base. Hop bitterness is nearly absent, allowing the fruit’s natural tannins and tartness to provide structure.
