This vibrant Gose reimagines the style through the lens of a fresh salsa verde. Bright, zesty Lime and citrusy Coriander lead the sensory charge, supported by the unique savory-sweet fruitiness of Tomatillos. A distinct Green Chili presence provides an aromatic capsicum snap and a whisper of warmth, while the hallmark Salt addition enhances the mouthwatering, lactic tartness. The base of malted barley and wheat provides a soft, bready foundation. It is an adventurous, refreshing interpretation where the salinity and acidity perfectly balance the vegetal and spice-driven complexity, finishing crisp and invigorating with a clean, dry character.
Appearance. SRM 4, pale yellow with a moderate to full haze. Features a moderate white head with tight bubbles and good retention; highly effervescent.
Aroma. High intensity featuring sharp lime zest, citrusy coriander, and a fresh, vegetal tomatillo note. A subtle green chili aroma provides a peppery quality. Underlying bready, doughy wheat malt and a clean lactic sourness are present without any hop character.
Taste. Initial impression is tart and citrusy, showcasing lime and pome-fruit-like tomatillo. Medium-low salt character provides a savory, mouthwatering edge that highlights the doughy wheat malt. Green chili adds a distinct flavor and a very mild heat. Finishes very dry and acidic with lingering notes of coriander and sea salt. Bitterness is very low and unobtrusive.
Mouthfeel. Medium body with a rounder, thicker mouthfeel attributed to the salt and wheat proteins. High carbonation provides a lively, effervescent texture. A faint, tingling warmth from the alcohol and green chillis is present but well-integrated.
