This Dark Mild presents a modern interpretation of a classic British session ale, showcasing a sophisticated malt profile built on Chevalier base malt. The complex grist of Chocolate, Crystal, and CaraRed malts produces a deep ruby hue and layers of toasted biscuit, cocoa, and sweet toffee. Subtle dark fruit esters weave through the mid-palate, while a judicious dry-hopping with Amarillo provides a contemporary floral and citrus nuance that lifts the finish. At 4.2% ABV, it offers more substance than traditional examples while remaining remarkably drinkable, balancing rich heritage grains with a clean, satisfyingly dry conclusion.
Appearance. SRM 18-24. Deep ruby to mahogany color. Clear with a low to moderate tan head that shows fair retention and light lacing.
Aroma. Moderate malt intensity featuring notes of toasted bread, milk chocolate, and light caramel. Subtle dark fruit esters reminiscent of plum or raisin are present, complemented by a low floral and orange citrus hop character from the dry hopping.
Taste. Initial malt-forward impression of toasted biscuit and nutty chocolate. Malt sweetness is balanced by a moderate hop bitterness and the delicate citrus snap of Amarillo hops. Notes of toffee and dark fruit persist into the finish, which is clean and slightly dry rather than cloying. Complexity is high for the gravity, maintaining a focused malt-to-hop balance.
Mouthfeel. Medium body with a smooth, slightly creamy texture. Carbonation is moderate. No perceptible alcohol warmth or harsh astringency, providing a soft and approachable mouthfeel.
