This Bière de Garde presents a complex marriage of traditional French maltiness and rustic, wild fermentation. Expect a foundation of toasty, bready malt richness from the base, layered with bright, fruity esters derived from the Saison foeder blend. The influence of French oak adds a delicate structural depth, while the brewery’s house flora introduces a soft, refreshing acidity. This 2021 vintage exhibits a smooth, well-integrated character where the rustic, floral notes of the local culture complement the clean, biscuity malt profile, finishing crisp and dry with a lingering hint of orchard fruit and a touch of tannin.
Appearance. Deep gold to light amber in color with a slight haze from the blending process. It supports a moderate, creamy off-white head with good retention and light lacing.
Aroma. Moderate intensity featuring toasty and bready malt richness. This is accompanied by light fruity esters of pear and apple from the Saison component. A subtle, spicy yeast character and a faint hint of woody French oak are present, alongside a very clean, low-intensity rustic character from the house flora.
Taste. Leading with medium-low toasty and biscuity malt flavors, the palate quickly shifts toward a soft acidity. Fruity esters are prominent, balanced by a medium-low hop bitterness. The fermentation character is complex but clean, finishing notably dry with a lingering toasty malt note and a whisper of oak tannin.
Mouthfeel. Medium-light body with a smooth, silky mouthfeel. Carbonation is moderate to high, providing a prickly sensation. Despite the oak aging, there is no harsh astringency, and the alcohol warmth is very low and well-integrated.
