ReCraft Whiteout is a crisp, modern interpretation of a Specialty IPA, specifically a Black IPA brewed with bottom-fermenting yeast for a 'Cold IPA' profile. This approach results in a remarkably clean canvas that highlights an aggressive hop profile. Resinous pine and dank notes from Columbus lead the charge, while Idaho 7 contributes layers of tropical stone fruit. These American influences are balanced by the herbal and floral nuances of Polish Hops varieties 2/20 and Izabella. The dark malts provide a subtle, supportive backdrop of cocoa without any burnt harshness, culminating in a dry, snappy finish that emphasizes drinkability and hop-forward intensity.
Appearance. Dark brown to nearly opaque black (SRM 35-38). Topped by a moderate, persistent light tan head that leaves fine lacing. Clarity is high, showing no significant yeast haze or turbidity.
Aroma. High hop intensity featuring resinous pine, grapefruit zest, and ripe apricot. Very low malt character provides a hint of toasted crust and mild chocolate. Fermentation is exceptionally clean with no detectable esters or phenols, allowing the specific hop oils of the Polish and American varieties to shine.
Taste. Initial impression is clean and dry with a firm, assertive bitterness. Hop flavors of pine, berry, and citrus peel dominate the mid-palate. Malt flavor is restrained, offering subtle notes of coffee and dark bread that support rather than distract. The finish is very dry and crisp with a lingering, clean resinous bitterness that is free of astringency or harsh roast.
Mouthfeel. Medium-light body with a smooth, crisp texture. Moderate carbonation provides a lively prickle on the tongue. Alcohol warmth is very low and well-integrated. No malt-derived astringency or heavy creaminess.
