This Australian interpretation of a classic Mojito captures the essence of a sun-drenched afternoon. Built on a crisp Straight Sour Beer base, it showcases a bright, lactic acidity that highlights the zingy citrus of fresh Australian limes. The inclusion of native river mint adds a sophisticated, cool herbal layer that differentiates it from standard garden mint, offering a slightly earthy, peppery finish. Pale malts provide a subtle crackery backbone, keeping the focus on the refreshing interplay between tart fruit and botanical freshness. Highly effervescent and bone-dry, it delivers a clean, natural flavor high that is exceptionally thirst-quenching.

Appearance. Pale straw color (2-3 SRM). Pours with a large, dense white head that dissipates quickly due to high acidity. Clarity is mostly clear with a very faint haze.

Aroma. High intensity aroma defined by sharp, clean lactic sourness and a dominant burst of fresh lime zest. A cooling, herbaceous note of native river mint provides a botanical lift, supported by a subtle background of biscuity pale malt. No hop aroma is present.
