This Australian Sparkling Ale presents a celebratory sensory profile, characterized by its signature high carbonation and dry, lip-smacking finish. Crafted with all-Aussie ingredients, it leads with a crisp, clean malt base of grainy pale malt. The hop character is distinctively earthy and herbal, reflecting the traditional terroir. Pears and apples dominate the ester profile, lending a subtle fruitiness that complements the firm bitterness. At 5.8% ABV, it carries a light, integrated warmth and a surprisingly full body that belies its high attenuation. The result is a refreshing, effervescent brew that sparkles with a prickly carbonic bite and a lingering, resinous finish.
Appearance. Deep gold color (SRM 6) with a tall, frothy, persistent white head featuring tiny bubbles. Noticeable effervescence and brilliant clarity, though it can appear cloudy if the yeast is roused during the pour.
Aroma. Moderate intensity with a clean, soft aroma. Subtle notes of bready malt provide a base for earthy and herbaceous hop character. Distinctive pome fruit esters, specifically pear and red apple, are present, alongside a very faint, fresh yeasty note.
Taste. Initial impression of mild, grainy malt sweetness is quickly overtaken by a firm, rising bitterness. Hop flavors are earthy and slightly resinous or peppery. Pears and apples are noticeable in the esters. The finish is exceptionally dry and highly attenuated, leaving a crisp, lingering bitterness and a clean aftertaste.
Mouthfeel. High carbonation provides a mouth-filling, spritzy carbonic bite. Despite the high attenuation, the body feels medium-full and smooth. A subtle, well-integrated alcohol warmth is present, consistent with the ABV.
