This vibrant Wild Specialty Beer showcases a double-dose of fresh nectarine, delivering an intense, stone-fruit-forward profile. The aroma is dominated by juicy nectarine skin and pulp, interlaced with a sharp, clean lactic acidity and subtle wild fermentation funk. On the palate, a lively entry of tart stone fruit leads into a pinpoint acidity that mimics freshly squeezed fruit. The finish is remarkably clean and refreshing, with a lingering fruit zing that cleanses the palate. This 6% ABV sour balances its bold fruit character with a lean malt backbone, making it exceptionally neckable and bright while maintaining a sophisticated fermentation complexity.
Appearance. Deep gold to light orange hue (SRM 5-8) with a persistent haze from the heavy fruit addition. Pours with a moderate white head that fades somewhat quickly due to the acidity, leaving minimal lacing.
Aroma. High intensity of ripe, pulpy nectarine and tart stone fruit skin. A clean, sharp lactic sourness is primary, backed by subtle earthy funk and floral esters. Malt character is low and neutral, providing a simple cracker-like backdrop.
Taste. Immediate sharp lactic acidity and vibrant, juicy nectarine flavor. Initial fruit sweetness is quickly overtaken by a tart, palate-cleansing zing. Hop bitterness is negligible, allowing the acidity to provide the primary structure. The finish is very dry and crisp with a lingering, refreshing stone fruit aftertaste.
Mouthfeel. Medium-light body with high, effervescent carbonation. Features a light acidic prickle on the tongue that enhances the perception of dryness. Very low alcohol warmth is well-integrated and subtle.
