Red Tide is a vibrant, fruited interpretation of a Berliner Weisse, elevated by a bold infusion of Raspberry and Guava. It presents a striking roseate hue with a lively, effervescent character typical of the style. The sensory experience is dominated by a sharp, clean lactic acidity that mingles with the intense, tart snap of fresh raspberries and the tropical, aromatic depth of guava. A delicate foundation of doughy wheat malt provides a subtle bready counterpoint to the fruit. Despite its slightly higher 5% ABV, it remains remarkably refreshing, finishing bone-dry with a lingering, bright fruit tartness and virtually no perceived hop bitterness.
Appearance. Rose to deep pinkish-red; large, dense white head with a pink tint and poor retention; hazy to opaque due to fruit additions and wheat content.
Aroma. High intensity of tart raspberry and tropical guava; sharp lactic sourness dominates the foreground with a secondary note of raw bread dough and sourdough from the wheat malt; no hop aroma.
Taste. Initial impression is sharply sour and acidic; intense raspberry tartness and fleshy guava flavor provide the main character; supported by a light, grainy wheat malt presence; bitterness is undetectable, with acidity providing the balance; finishes very dry and clean with a lingering fruit snap.
Mouthfeel. Medium-light body; very high carbonation producing a spritzy, effervescent sensation; crisp acidity; no alcohol warmth; light fruit-derived silkiness from the guava.
