This American IPA embodies the classic West Coast profile, delivering a sharp, resinous punch balanced by bright citrus. The dry hopping of Simcoe provides a foundation of dank pine and earthy resin, while Citra elevates the aromatic profile with vibrant notes of grapefruit peel and zesty lime. Its lean, pale malt base ensures the focus remains entirely on the hops, leading to a crisp, aggressively bitter finish that clears the palate. Brilliantly clear and assertively hoppy, it strikes a balance between old-school bitterness and modern aromatic intensity, offering a clean fermentation profile that allows the interplay of tropical fruit and evergreen notes to shine.
Appearance. Deep gold color (8 SRM). Brilliantly clear with a medium-sized, persistent white head and significant lacing.
Aroma. High intensity hop aroma featuring prominent grapefruit and lime from Citra, backed by Simcoe’s notes of resinous pine and subtle passion fruit. Low, clean, grainy-sweet maltiness. Clean fermentation profile.
Taste. High hop flavor of citrus and pine. Low crackery malt flavor. Firm, medium-high bitterness that is clean and not harsh. Balanced toward hops. The finish is dry with a lingering hoppy aftertaste and clean bitterness.
Mouthfeel. Medium body with a smooth texture. Medium-high carbonation provides a crisp feel. Light, well-integrated alcohol warmth without any astringency.
