This Brett Beer offers a vibrant and refreshing sensory experience, designed with a sparkling, celebratory character. The aromatic profile is dominated by a bright, perfume-like elderflower presence, which intertwines with the wild fermentation's signature stone fruit and tropical esters. On the palate, the elderflower provides a rich, floral depth, supported by a moderate, crisp acidity and a bone-dry finish typical of the style. The wild yeast introduces a subtle, earthy complexity that balances the floral sweetness without overwhelming the delicate base. It is a light-bodied, highly effervescent ale that mimics the elegance of a dry sparkling wine, perfectly suited for festive occasions.
Appearance. SRM 3-5 (Pale straw to light gold). Pours with a voluminous, frothy white head that dissipates to a thin collar; clarity is slightly hazy to clear.
Aroma. High intensity floral bouquet of elderflower, reminiscent of white blossoms and lychee. Moderate fruity esters of apricot and pineapple from the wild fermentation, accompanied by a clean, light funk—hints of hay and sun-dried grass. No diacetyl or DMS.
Taste. Initial impression is tart and floral. Strong elderflower flavors are center-stage, followed by a light lemon-like acidity. Malt character is minimal, providing a faint cracker-like base. Hop bitterness is very low, allowing the fermentation character and botanicals to lead. The finish is exceptionally dry and crisp with a lingering floral aftertaste.
Mouthfeel. Light body with a prickly, high carbonation that creates a sparkling, champagne-like texture. No perceptible alcohol warmth. Very low astringency from the elderflower petals.
