This 2016 vintage New World Cider captures the essence of an exceptionally sunny growing season. The use of extra-ripe apples with deep red skins imparts a beautiful pinkish hue to the liquid. On the nose, a light floral bouquet dances alongside concentrated apple notes and a rustic hint of straw, signaling its long maturation. The palate is unapologetically bone dry, offering a crisp, clean profile where the natural acidity of the fruit shines. It is a light and elegant expression, balancing the vibrancy of the fruit with the refined, earthy nuances of a well-aged cider.
Appearance. Distinctive pinkish hue with brilliant clarity. Effervescent with light carbonation; head retention is very brief, leaving a clean surface.
Aroma. Moderate intensity featuring ripe, fresh apple character. A delicate floral bouquet is prominent, complemented by subtle earthy notes of straw and dried grass resulting from extended maturation.
Taste. Bone dry and highly attenuated. Initial flavors of crisp apple and tart fruit skin dominate. No hop bitterness or malt presence. Secondary notes of straw and a light mineral quality emerge in the finish. Clean and refreshing with a lingering tartness.
Mouthfeel. Light body with a crisp, thin texture. Moderate to high carbonation provides a lively, sparkling sensation. Very low astringency and a subtle, well-integrated alcohol warmth.

Our mission for the Outsider series is to show how Bramley apples can make an exceptional and fine cider, and how the weather throughout different growing seasons can effect a vintage in cider as it does in wine. The Bramleys used each year are from one orchard, picked, pressed and fermented in the same vessels, temperatures and the same conditions each year. They travel through two types of fermentation, yeast and MLF, then are aged Sur Lie  for a minimum of 24 months.  Vintages available 2016 and 2017  both very different. The Outsider .... A true expression of our Terroir Vintage 2016   Summer 2016 was insanely warm and sunny. This made the fruit extra ripe and turned their skin almost all red. This has created a beautiful pinkish hue in the colour. Topped with a light floral bouquet on the nose. Light, appley with a hint of straw as you'd expect of a cider matured for this long.   Tank :- R3 Food Pairing   Take your time to enjoy this one, dissect and share, paired with a deliciously creamy blue cheese would be my suggestion. Tech deets   Apples -  Bramley. Yeast - Wild/ Native.  Maturation - Long (12 months plus)  Alc : 6.5% Abv. SG- 0.997 . RS- 0g/L. Low intervention. Unfiltered.
