Lollipop is a sophisticated Belgian Golden Strong Ale that bridges the gap between childhood nostalgia and adult complexity. A foundation of Pale and Vienna malts creates a rich, caramelized aromatic base, while the addition of Belgian candi sugar reinforces the theme with a clean, sugary lift. Carapils malt contributes to a dense, long-lasting head. The sensory profile is defined by bright pome fruit esters—notably pear—and a subtle peppery alcohol warmth. Despite its 8.5% ABV, the beer remains effervescent and deceptively light-bodied, concluding with a firm bitterness and a signature bone-dry, refreshing finish.
Appearance. Pale gold to deep yellow (SRM 4-6). Brilliant clarity with an exceptionally large, rocky, white head that leaves persistent lacing. Highly effervescent with visible rising bubbles.
Aroma. Moderate to high intensity. Dominant fruity esters of ripe pear and apple over a rich, sweet malt background with notes of light caramel. Low herbal and spicy hop character. A soft, perfumy alcohol presence is evident but well-integrated.
Taste. Initial sugary sweetness transitions quickly into a complex blend of pear-like esters and spicy phenols. Malt flavors are bready and slightly caramelized. Medium-high bitterness emerges mid-palate, leading to a long, very dry finish. Aftertaste is clean with lingering herbal hop notes.
Mouthfeel. Medium-light body, appearing lighter than its gravity suggests. High carbonation provides a sparkling, mouth-filling effervescence. Smooth, noticeable alcohol warmth without harshness.
