This Wild Specialty Beer presents an intricate sensory profile shaped by its fermentation in Oak foeders. The initial impression is defined by a bright, lemon-like acidity that intertwines with complex funk—notes of wet hay and earthy leather characteristic of a diverse wild fermentation. The wood influence is prominent but integrated, contributing soft vanilla undertones and a structural tannic dryness that balances the sharp lactic tang. Underlying this is a delicate, cracker-like malt presence. The result is a vibrant, effervescent ale where the rustic foeder character adds depth to the crisp, tart finish, creating a sophisticated and refreshing sensory experience.
Appearance. SRM 3–6. Pale straw to gold. A fine-beaded white head forms but dissipates rapidly due to low pH. Clarity is slightly hazy, typical for a foeder-aged wild ale.
Aroma. High intensity. Dominant lactic acidity with citrus-like notes, followed by complex Brettanomyces funk including hay, leather, and mild earthy tones. The Oak foeder adds subtle vanilla and toasted wood aromatics. Very low bready malt character.
Taste. Initial impression is sharply acidic and tart. Clean lactic sourness dominates with minimal hop bitterness. The fermentation character is wild and funky, complemented by a mid-palate of neutral grain and a distinct dry woodiness from the oak. The finish is bone-dry and lingering with a crisp tartness.
Mouthfeel. Medium-light body with high, prickly carbonation that accentuates the acidity. A slight tannic astringency from the wood is present, enhancing the dry finish. No alcohol warmth.
