This Imperial Stout offers a decadent, sensory-forward experience reminiscent of a liquid dessert. The aroma is dominated by high-intensity notes of ripe banana and rich milk chocolate, supported by a deep, roasty malt backbone. As the liquid coats the palate, a thick and velvety body delivers lush flavors of toasted hazelnut and pecan, which meld seamlessly with the confectionery sweetness of the fruit. The finish is long and indulgent, balancing a discernable toasty roast against a subtle, warming alcohol presence. It is a bold, harmonious interpretation that captures the essence of a banana split through a complex layer of specialty ingredients.
Appearance. Jet black and opaque (SRM 40+). Pours with a thick, dense, dark tan head that shows moderate retention and forms viscous legs on the glass surface.
Aroma. High intensity. Pronounced esters of ripe banana and dark chocolate dominate, layered over a rich base of espresso-like roast and toasted nuts. Subtle notes of caramel and toasty malt provide depth, with no detectable hop aroma.
Taste. Initial impression is intensely sweet and malt-forward. Strong banana flavors lead into a mid-palate of bittersweet cocoa and toasted hazelnut. The bitterness is medium-low, derived primarily from roasted grains, providing just enough balance to the decadent malt sweetness. The finish is lingering and creamy, with late-arriving notes of toasted pecan and a smooth, roasty aftertaste.
Mouthfeel. Full to very full-bodied with a chewy, syrupy, and velvety texture. Low carbonation enhances the richness. A noticeable, smooth alcohol warmth is present but well-integrated, avoiding any harshness or solvent qualities.

For this birthday edition stout we knew we had to go hard, so we've leaned heavily into the dessert theme and come up with a banana stout with a hint of toasted pecan and toasted hazelnut. This is one of our biggest and boldest stouts to date, with a ridiculously thick and velvety body. The banana notes dominate the flavour, mixing in seamlessly with a decadent stout base that balances intense malt sweetness with a discernable toasty roast. On the backend, a subtle toasted nut backend comes through late to round out this chocolate-banana-split-in-a-beer experience perfectly. You could say we wanted to have our cake and drink it too.
