This expression is defined by its massive infusion of whole raspberries, which drive a brilliant ruby aesthetic and a perfume of fresh-picked berries. On the palate, an upfront lactic tartness provides a refreshing zing, elegantly balanced by the natural, jammy sweetness of the fruit. The fermentation character is clean yet complex, offering a dry, effervescent finish that cleanses the palate. Appearance. Vibrant pink to deep ruby red; pink-tinted head with moderate retention that fades to a fine collar; slight haze present from fruit solids and yeast.
Aroma. High intensity fresh raspberry aroma with a jammy and slightly floral character; low clean lactic sourness; very low crackery malt; no hop aroma; faint esters of pear or red apple from the Belgian yeast.
Taste. Initial impression is sharply tart and fruity; dominant fresh raspberry flavor with a seed-like nuttiness; very low bready malt backbone; no hop flavor or perceived bitterness; clean lactic acidity provides a firm structure; finishes very dry and refreshing with a lingering berry tartness.
Mouthfeel. Medium-light body; high carbonation providing a prickly, spritzy sensation; no alcohol warmth; low astringency from fruit skins; very refreshing and crisp.
