Paradiso is a decadent Wild Specialty Beer that pushes the boundaries of the style with an opulent, smoothie-inspired character. Intense aromas of strawberry jam and a creamy strawberry thickshake dominate the nose, underpinned by the exotic, tropical floral notes of dragonfruit and the muskiness of guava. On the palate, a sharp, cleansing acidic tartness provides an immediate counterpoint to the rich, lactose-driven sweetness. Vanilla weaves through the fruit layers, adding a velvety depth and complexity. The experience is defined by its luxurious, mouthcoating texture, delivering a dense, fruit-forward profile that feels like a liquid dessert while maintaining a refreshing lactic edge.
Appearance. Opaque and dense, reminiscent of fruit purée; vibrant magenta to deep pinkish-red in color. Pours with a thick, pink-tinted head that shows moderate to poor retention, leaving a heavy fruit-stained lacing on the glass.
Aroma. High intensity aromatics of fresh strawberry jam and sweet cream. Secondary notes of tropical guava and subtle, floral dragonfruit are present. A distinct vanilla sweetness blends with a milky lactose character, while a clean, lactic sourness provides a bright backdrop without significant funky phenols.
Taste. An initial punch of sharp, acidic tartness quickly gives way to waves of sweet strawberry, guava, and earthy dragonfruit. Malt flavor is low, masked by a heavy presence of lactose and vanilla.
