This celebratory Weissbier pours a striking golden yellow with a characteristic medium haze and a thick, dense white head resulting from natural carbonation. The sensory profile is defined by a specialized fermentation using Mogwai Labs yeast, which contributes vibrant esters of peach, apricot, and a distinct lingering candied banana, subtly balanced by soft clove phenols. A heavy grist of pale and rolled wheat provides a remarkably smooth, rich body and a classic bready, doughy grain character. Highly drinkable and effervescent, it maintains the traditional German wheat beer elegance while offering an enhanced fruit-forward complexity and a clean, spritzy finish.
Appearance. Golden yellow (4–6 SRM). Thick, dense, long-lasting white head with significant lacing. Medium haze with a soft glow from suspended yeast and wheat proteins.
Aroma. High intensity. Dominant candied banana, peach, and apricot esters. Moderate spicy clove phenols. Bready, grainy wheat malt presence. No detectable hop aroma.
Taste. Moderate soft bready wheat and doughy malt flavor. Pronounced fruity esters of apricot and banana. Very low bitterness provides just enough balance to the grainy sweetness. Finishes relatively dry and clean with lingering fruit notes.
Mouthfeel. Medium body with a creamy, fluffy texture enhanced by the addition of rolled wheat. High carbonation leads to a spritzy, effervescent sensation. No alcohol warmth.
