This non-alcoholic American IPA presents a vibrant sensory profile that defies its low ABV. A heavy dry-hop of Simcoe Cryo, Citra, and Mosaic creates an intense bouquet of pithy citrus and sticky pine resin. Additions of Chinook alongside mango and pineapple liquids amplify the tropical complexity, weaving overripe fruit notes into a classic resinous backbone. The palate is defined by a firm, distinctive bitterness characteristic of the West Coast style, supported by a lean malt profile that allows the Simcoe and Mosaic to shine. It finishes exceptionally crisp and refreshing, leaving a lingering trail of hop resin and clean bitterness.
Appearance. Medium yellow (approx. 4-5 SRM). Topped with a tremendously fluffy, persistent white foam head. Clarity is clear with a brilliant sheen.
Aroma. High intensity hop aroma featuring prominent notes of grapefruit pith, pine needles, and resinous spruce. Supporting these are distinct tropical layers of mango and pineapple. Malt aroma is low, providing a neutral, cracker-like background. Clean fermentation profile with no detectable alcohol warmth.
Taste. Initial hop-forward impression of citrus zest and pine. The flavor is dominated by Simcoe and Mosaic hop character, delivering layers of resin and tropical fruit. Bitterness is medium-high to high, providing a sharp, clean edge. Malt flavor is low and grainy, acting as a functional canvas for the hops. Finish is dry, crisp, and refreshing with a lingering resinous aftertaste.
Mouthfeel. Medium-light body with a smooth texture. High carbonation provides a lively, scrubbing sensation on the tongue. Zero alcohol warmth due to the low ABV. Refreshing and clean with no lingering astringency.
